I've always found there to be strange but clear difference between those who like cold soups and those who don't. There's also those who will not eat soup during the summer or in place where the outdoor temperatures are high. Funny enough, most cultures that dwell in hot climates often have hot soups as the main part of their diet. Ever wonder why that is? I know :)
Moringa, Broccoli and Almond Gazpacho
A fresh taste of broccoli, complimented with the the smokiness of toasted almonds, and topped off with highly nutritious Moringa, you can't go wrong with this refreshing summer soup.
Garden Fresh Gazpacho
This is a recipe I adapted from another website awhile back. I can't remember which one. It has been a hit every time I've made it. A beautiful summer soup packed full of garden fresh flavors. You can leave it chunky or puree it slightly and add diced cucumbers, bell peppers and chopped parsley for garnish.
Roasted Red Pepper and Eggplant Soup
I first started making this soup when I was working on a private yacht somewhere in the Mediterranean. It was such a hit, it became one of my regular dinner starters. Boasting fresh bold flavors, it can be served hot or cold.
