Admittedly, I am not a morning person who often has zero motivation to focus on anything before noon, when I finally decide to change out of my underwear, much to my roommates' chagrin. However, some days when I've had a dish on my mind whilst falling asleep the night before, I wake up ready to tantalize their tastebuds with something new.
Huevos Rancheros are a classic Mexican breakfast, with varying interpretations, served throughout the world. Try adding chorizo or other meats such as ground beef or pork. I like to served mine on a bed of greens or herbs and topped with a drizzle of yogurt and chopped coriander.
Breakfast Strata is an amazing invention. You can take nearly any combination of vegetables, herbs and spices, throw it together in a baking dish, and pop it in the refrigerator the night before, and BAM! your guests will be in awe that you slaved away at such an delicious tasting breakfast main course. It's especially great for using up day old (or older) bread.
Frittata's are another one of those breakfast entrees that are perfect for gathering up fresh vegetables and herbs from your garden, or using up leftover vegetables from last nights dinner. Oh, and hey, if you have leftover meat, throw that in there too! This version I like to use Gruyere, but any cheese you have on hand will work.
This is a Turkish dish, and I'm including it in honor of one of my favorite bosses when I was working in the yachting industry during my two Mediterranean seasons. I'm also including it because I always looked forward to making it, and it's really delicious. It can be prepared without meat.
