Apple Parsley Vinaigrette

1             Apple, peeled, cored, chopped
1 cup      Parsley leaves
½ cup    Apple Cider Vinegar
2 tbsp    Dijon Mustard
2 tbsp    Agave Nector
½ cup    Olive Oil


In food processor combine apple, parsley and vinegar. Pulse several times until liquified. Strain through fine mesh sieve, discarding pulp. Return remaining liquid to food processor, add mustard and agave. With motor running, add olive oil in a slow steady stream until blended and emulsified.  Adjust seasoning with vinegar and agave as desired.
